
I'm from Coventry originally, moving to London for university in my late teens.
I met and became friends with Dalston's Soda founder Duncan O'Brien during this time.
After university I moved back home and decided to train to become a chef, working at the Hyatt Regency hotel in nearby Birmingham.
I worked my way up to senior chef de partie before leaving the Hyatt to join the team at Simon Rogan's ""Roganic"" in Marylebone.
We won multiple Zagat awards during my time at ""Roganic"". After the restaurant closed Simon Rogan took over from Gordon Ramsey at Claridges, opening ""Fera"" and winning a Michelin star inside it's first year. Simon Rogan's ""L'Enclume"" won it's third Michelin star during my time working for his brand.
I finished working for Simon Rogan not long after his Claridge's restaurant opening, joining Dalston's Soda shortly after this departure.
I started as production manager as for the first few years we hand made all the drinks at our pilot plant in Hackney Wick.
We then built a soda brew shed in Mile End before outsourcing the manufacturing and moving to offices in Farringdon.
