Duncan founded Dalston’s in 2013 after spending his 20’s as a wandering anthropology-trained chef in London, Scotland, and the Caribbean with Orient-Express Hotels on trains and boats. It was on the Royal Scotsman hotel train that Duncan was taught to source the finest ingredients and present them simply, something he has applied to Dalston’s drinks.

Part of Dalston’s guiding methodology is the general idea in food that by using higher quality ingredients you can make delicious things without relying so much on fat, sugar, or salt.
